Vegetarian help wanted!
My Dad has arrived to visit us today and I'm belatedly thinking through the whole food thing. He's vegetarian these days and my family is anything but. I know I'm going to end up cooking a bunch of double meals so my question to you is - can you give me some good vegetarian recipe suggestions?

I'm looking for things that are easy-ish to do (ie take no more than half an hour to put together, maybe a bit longer including cooking time) but that are your favourite of the things you make that are veggie (please ignore this whole post if you don't - I'm sure there are plenty of you on that front :-]).

Dinner tonight will be probably be New Covent Garden Soup Company soup (one of my cheat items I usally have in the fridge), but tomorrow I work from home so can make ratatouille, which I know breaks my 'quick to assemble' rule but is one of the few things I have in my recipe book.

Mexican Black Bean Salad

You need:
*Tortilla Chips (I use Doritos because I hate the other corn chips sold in this country)
*Lettuce/Salad Greens
*Black Beans (in the Caribbean section)
*Mild salsa (or spicy, to taste)
*Cheese (I like a mild cheese on this salad; YMMV)
*Avocados
*Sour cream
*Vine tomatoes (they're sweeter)

Peel and slice the avocados in half-inch wedges (or so!)
Cook the black beans
In the bottom of salad bowl, layer:
Tortilla chips, then
Lettuce, then
Black beans, then
Cheese.
Arrange avocados and sliced tomatoes artfully around.
Mix sour cream and salsa together until it is a nice pinky-salmon colour (you can leave out the sour cream and just use salsa, of course, if your dad's noot into dairy)

Serve salads with a couple of dollops of dressing.

[info]earthmystic and his wife made this salad for me when I'd come over on class nights. It is my favourite quick vegetarian dish evah.

Spanish omelette, or tortilla, is something I recommend frequently to friends asking for veggie recipes. Traditionally it's a potato filling, but you can put in pretty much any veggies you like - the tapas bar in Camden Town I've been to a couple of times (Jamon Jamon) serves it with red peppers in and onion and mushroom and (I think) peas.

I actually quite like a brussels sprouts omelette, but tastes do vary... *g*

I make my own vegetable soups - mostly it's a case of just: saute vegetable (chopped or sliced) in butter, add flour to make roux (if you want to thicken it), add stock and/or milk, season to taste. Some soups (e.g. courgette) are better if the sauted veg are liquidised before you make the roux, then add them back in to it before you start adding stock. Mushrooms should be chopped fine, onions sliced, multi-vegetable soup I usually make chunky with diced veg.

My other vegetarian options are usually along the lines of rice or pasta with mushrooms and onions and whatever else I've got in. Pasta sauce is usually cheese (hard grated, or soft Philly types usually with garlic!) and/or creme fraiche.

I have just been reminded, by a post in another LJ entirely, about my sister's Greek/Cypriot pourgouri pilaff.

You need to have pourgouri/bulgur (cracked wheat) for it, and vermicelli nests. Also chicken/vegetable stock, and tinned tomatoes, and an onion. Quantities below serve two as a side dish easily.

Fry a large chopped onion in oil or fat. When just turning brown, crush in a handful of vermicelli (fithes), and stir until most of it turns white.

Add at least half a tin of chopped tomatoes. Stir well. Add 1½ mugs of boiling water and one pork, chicken or vegetable stock cube (or about 1 pint chicken broth), and seasoning (to taste). Boil for under a minute.

Add one mug pourgouri (bulgur/cracked wheat). Stir over full heat until it boils. Turn off heat, put teatowel over and clamp lid down tightly over that. Leave to steam 10-15 minutes. Serve with Greek yoghurt, if liked. You can add herbs with the seasoning - a particularly Cypriot thing would probably be lots of flat-leaved parsley, but my sister hates that!

Vegetable stir-fry?
You could either use Quorn pieces in place of meat, or just stick with your choice of veggies only. (Bamboo shoots & beansprouts recommended for an asian feel ;)

We eat a LOT of pasta in this house - I love the following:

Plain cooked pasta, stir in LOTS of pesto and mozzarella cheese, re-heat to slightly melt the cheese, top with parmesan, pine nuts and a sprig of fresh basil. Yumm. Also serve with garlic bread.

Cheese and potato bake: peel and thinly slice a pound or two of spuds (depends on how many you are feeding), dice an onion and grate about 8oz of strong cheese. Layer the potato, onion and cheese to fill a greased baking dish. Pour a small container of single cream over the top and top with more cheese. Bake in a medium to cool oven for an hour or so (depending on size of dish). This is quicker to prepare if you have a food processor with a slicing attachment for the spuds - the thinner, the better. It also works well in a slow-cooker.

Can't go wrong with a veggie quiche. Do the pastry in a food processor and it's together in no time. Topped with peppers and mushrooms it's pretty good.

Any recipe you have which involves mince (lasagne, chili, cottage pie etc.) you can just replace the mince with Quorn. Smaller sprogs might even be prepared to eat Quorn as it doesn't taste wildly different to mince if prepared in the same manner...

I'm feeling hungry now!

Was going to say the same thing about Quorn mince - not too fond of the Quorn pieces, but the mince works surprisingly well! I made a big pot of bolognese on Monday, and turned the leftovers into chili with a tin of kidney beans. Yum!

If you roughly mash a tin of kidney beans and fry with chopped onion and cumin, it makes a really sice meat substitute to put in wraps with whatever else you like in wraps.

Cheese and spinach with anything.

Falafel are fun to do.

Stuffed field mushrooms are good.

Or slice and fry lots of mushrooms with a good double splosh of wine and cook till all the liquid's absorbed, then bake under cheese in a pastry case...

some of the above I could see you doing half a double meal - ie, two pastry cases with different fillings, or wraps and rice and guacc and salsad and a choice of mince or refried beans. Good luck!

Also, really easy (& quick, bar 20 mins or so boiling time): boiled waxy/new potatoes with quark/sour cream, add some fresh chopped chives or spring onions and/or small cut pepper to taste.

Baked potatoes with all sorts of fillings (cheese, beans, most vegetables; in sauces or not). And you can serve the same with non-veggie fillings to the carnivores. (I generally go for cheese and baked beans.)

(Baking them may take a bit more than your half hour, depending on your oven and how old the potatoes are, but it's just time in the oven which can be used for other things.)

Pasta with tomato sauce.

Tortillas with beans, rice, cheese and sauteed veggies.

I do spanish omelette the same way in an oven safe pan but once the eggs hit the pan I stick a wooden spoon in and shake the pan around the spoon to create the egg curds. Then toss in the filling and shake around the spoon again. Now, put the whole thing under the broiler for about 5 minutes.

Pancakes, potato pancakes, tortillas with cheese and veg melted inside, cooked beans and rice heated with onions and tomato sauce and topped with cheese, baked apples, pasta with cheese sauce, bread and cheese with marmalade, fruit salad, waldorf salad.

Dave's Mushroom Risotto is often requested by people who are normally carnivores, but it does take a bit of faffing around with (add the stock a little at a time), and the balsamic glaze that's the finishing touch isn't all that easy to get hold of. If you fancy the idea, I'll get the recipe off him.

Had you considered pizza? Some veggie, some not, then you're more or less all eating the same thing. Buy in a few ready-done cheese & tom bases, add interesting bits, bake.
